The Union Club of Victoria began in 1879 above a butcher shop — proof that future power-brokers hadn’t yet discovered oat-milk lattes and vegan brownies. By 1913 they had moved into the stately clubhouse on Gordon Street, trading sawdust for chandeliers. Named for the “Union” of Canada — not out of any crush on organized labour — it has spent generations hosting long lunches, longer debates, and the quiet choreography of influencing policy over drinks and dessert.
